Brown Rice Pudding Recipe

| 1 | cup | brown rice | |
| 10 | tablespoons | apple juice concentrate, frozen | |
| 1 1/2 | cups | evaporated skim milk | |
| 2 | large | eggs | |
| 1/2 | teaspoon | cinnamon | |
| 1/2 | cup | raisins, optional | |
| 1 | tablespoon | almonds, slivered, toasted, optional, or more | |
| 1 | teaspoon | vanilla extract, optional | |
Directions: | |||
| Cook rice as usual, but replace 6 tablespoons of water with 6 tablespoons of the apple juice concentrate. Beat the remaining ingredients (execpt nuts together in pot. Mix in rice and cook 8-10 minutes until thick, stirring almost constantly. Spoon into dishes and chill. Sprinkle with nuts, if desired. If you like it sweeter drizzle with some maple syrup or sprinkle with a teaspoon of brown sugar. | |||
